A driver meets you inside the terminal with your name, helps with the luggage, and takes you straight to the hotel. No queue, no fare negotiation, and no working out which exit you need at two in the morning.
Transfers are priced per vehicle, not per person, so a family of four pays the same as a couple. Above three or four passengers with luggage it is usually cheaper than two taxis, and considerably less trouble.
The same applies between the emirates. Dubai to Abu Dhabi is about an hour and a half, and a private car with a waiting time included is what makes a day trip to the mosque and the Louvre work.
The alternatives
Metro, bus and taxi
The metro reaches Terminals 1 and 3 at DXB directly and is the cheapest way into the city, though it is awkward with several suitcases and does not run through the night.
Official RTA taxis are metered and queue outside every terminal. From Zayed International in Abu Dhabi there is also the Airport Express coach to Ibn Battuta in Dubai, hourly and around the clock, taking about ninety minutes.
