Who certifies kashrut
The Emirates Agency for Kosher Certification (EAKC) supervises most of what is available, at a glatt kosher standard. The agency does not publish a public list of approved establishments on its site.
Because there is no published list, anything you read anywhere — including here — should be confirmed directly before you rely on it for a meal.

How it actually works
The most reliable arrangement is catering delivered to the hotel, ordered in advance. It removes the dependence on a particular restaurant still being open on the dates you are there.
Shabbat is a working day in the Emirates. Friday is the short day and the weekend falls on Saturday and Sunday, which affects opening hours far more than it affects food.
